Taco Cupcakes

Taco Cupcakes!

Preheat Oven to 375'f

Ingredients

  • Some Beef
  • Some Taco Mix
  • Some Cheese (any kind will do)
  • Some Beans (I used red kidney beans from a can)
  • Wonton Wrappers (recipe below as well or you can buy them)
  • Some random taco topper veggies (lettuce, tomato, salsa, sour cream, guac) 

Step 1: Make your wonton wrappers as follows:

1 egg and 1/4 tsp salt mixed thoroughly together with 1/4 cup water. Add in 2 cups of flour to that wet mixture and knead for 5 minutes until a nice comfy ball of dough. You may need to add more water but only a little bit at a time because you don't want it to get too sticky. Let the dough set for 30 minutes in a bowl, covered with a tea towel (dish towel). When time is up, flour up a counter and get to work rolling the dough out very thin! It gets really elastic so what I did was took squares of the dough I had cut out and further stretched them thinner with my fingers. Do whatever works for you. If you have left over dough you can just freeze the stuff. I've been told that if you put the dough in the fridge for a little bit (few minutes) before rolling it out it's less frustrating.

Step 2: Cook your beef in a pan. Drain out the fat and then add in the taco seasoning according to package directions. (I did this while I was rolling out the wonton dough)

Step 3: Lay squares of Wonton dough into your cupcake pan (you may want to spray your pan firsties!) and then put in a spoonful of your beans and some cheese atop. Lay another peice of wonton atop of that and then a spoonful of your taco beef and some cheese to top it all off.

Step 4: Put these beautiful creations in the oven for 15-20 minutes (keep an eye on them) until your everything is nice and browned and the wonton dough is cooked (I pulled at the edges - but be careful not to burn yourself).

Step 5: After you've taken them out of the oven and given them a chance to cool a bit, plate them and then top with some salsa, lettuce, tomato, guacamole, or whatever else floats your taco boat. (I topped mine with salsa and green olives.)
